Glazed Pecan Halves

Glazed pecan halves take a rich and sweet nut, and transform it into a confection ready for direct snacking or inclusion in other desserts. Their hard butter and sugar shell (with a hint of salt and honey) won’t stick to one another, and add enhance the fantastic crunch of the pecan.

Pecans’ flavor differs depending on the cultivar used. Flavors may include nutty, woody, grain-like, buttery, caramelized, roasted, and sweet notes. Most pecans will finish with a hint of bitterness. Pecans may also have hints of acridity, oiliness, or astringency.

Pecans pair well with warm, sweet spices like cinnamon, clove, and nutmeg as well as with fruit such aspear, citrus, apple, grape and peach. Finally, pecans pair well with maple syrup, brown sugar, and molasses.

The tree that produces the pecan,Carya illinoinensis,is native to North and Central America and is most often found growing along the Mississippi River. They are now cultivated all over the world, although they were cultivated for the very first time as recently as the 1800s (young for tree nuts). While pecans have a nutty, fatty flavor they are not nuts at all! Technically, they are drupes, like cherries. Apart from the pecan being eaten as a snack and in recipes, the wood is also used as charcoal, mainly to smoke meat, and is sometimes used in tool handles and wood flooring.
