Wild Rice
Wild Rice is not really a rice; it is a seed from an Aquatic Grass. Wild Rice is very dark brown to black in color. In the southern reaches of it's true origin local tribes preferred to cook the rice until it blossomed like popcorn. The rice was then strained and served. In the rice's northern most range, the rice is cooked just till it has a softened bite, but before it blossoms. The rice is again strained, and then served.
Suggested Use:
Wild Rice has a chewy, nutty flavor. It's often served with game, such as Venison or Pheasant. Wild Rice with Wild Mushrooms is a great combination in soups or pilafs. Cooked with Cranberries, Wild Rice makes a great side dish.
