The Appaloosa bean is an heirloom bean that is related to red kidney and pinto beans. Some consider this unique bean elegant and graceful for its slender size, curved shape, and interesting color combination. One end of the beans is ivory and the other end is dark purple and mocha. This amazing hybrid bean is named after the Appaloosa ponies that belonged to the Nez Perce tribe that resided by the Palouse River in Eastern Washington and Northern Idaho.
Appaloosa beans have a mild flavor and a firm texture so they hold their shape when cooked. When the beans are very young the pods are safe to eat just like a green bean. Appaloosa beans can be successfully cooked in a variety of ways. They are also a very healthy, plant-based food and include a wealth of nutrition. They are a good source of B vitamins, rich in protein, packed with fiber, have bone-building calcium and heart-healthy iron. Appaloosa beans, as all beans, are proven to fight cancer, maintain a healthy weight, reduce blood sugar, improve cholesterol levels, and prevent constipation. Beans contain both soluble and insoluble fiber, so they are a superfood to keep your digestive system running smoothly.
Appaloosa beans can be combined with other beans, seasoned with olive oil, chili powder, salt, and pepper for a spicy side dish or added to soups, stews, chili, garden burgers, cold salads, warm salads, stews, and casseroles. They can also be cooked and whipped with tasty seasonings to create delicious and nutrition filled bean dips for crackers, vegetables and crusty breads. Appaloosa beans add a wonderful texture to baked goods including cookies, cakes, and brownies.
