Appaloosa Beans

The Appaloosa bean is an heirloom bean that is related to red kidney and pinto beans. Some consider this unique bean elegant and graceful for its slender size, curved shape, and interesting color combination. One end of the beans is ivory and the other end is dark purple and mocha. This amazing hybrid bean is named after the Appaloosa ponies that belonged to the Nez Perce tribe that resided by the Palouse River in Eastern Washington and Northern Idaho.

Appaloosa beans have a mild flavor and a firm texture so they hold their shape when cooked.  When the beans are very young the pods are safe to eat just like a green bean. Appaloosa beans can be successfully cooked in a variety of ways.
