Black Quinoa

Known as “Mother Grain” to the ancient Incans who grew it as a staple food, quinoa has found new life in modern cuisine thanks to its high levels of nutrition. Quinoa is simple to prepare, however, overcooking this product is a common mistake. If overcooked, black quinoa can turn mushy and unappealing. Measure 1 cup quinoa to 2 cups water (always use a 1:2 ratio). Rinse measured quinoa in a fine sieve to remove excess starch. Place it in a medium saucepan with water and a pinch of salt. Bring to a boil, then cover and simmer on low until all the water is absorbed. Allow the cooked black quinoa to set off heat for at least 5 minutes before fluffing with a fork. Enjoy!
