Porcini mushrooms are a gourmet delicacy that can enhance the flavor of many kinds of dishes. Their short shelf life is the reason why porcinis are best known in the U.S. as a dried product.

Porcini mushrooms have a higher protein content than most mushrooms, making them a smart option for vegan and vegetarian dishes. Their deep, meaty flavor is another reason for their popularity in meatless cuisine. However, the full umami flavors of porcini also means they pair well with hearty foods like beef, pork and heavy sauces. Dried porcini mushroom pieces must be softened before using. Soak the needed amount in hot water for 10 to 15 minutes. After they are rehydrated, measure and treat the porcinis as you would any fresh mushroom. Don’t discard the soaking liquid, it is full of flavor.
