Our Pasilla Negro Chile pods are a dried elongated, flat chile with thin flesh. Pasilla means little raisin and is one of the most popular chilies from Mexico. Native to central Mexico, this complex and pungent mild to medium chile boasts an earthy, berry or raisiny flavor with herbaceous and chocolate undertones. It’s wrinkled body curves into an arc and measures between 6 and 8 inches long and 1 1/2 inches wide. Chile peppers are often remembered for their bright or deep red colors, however, the Pasilla’s color is dark purple to almost black. It is similar to that of an Eggplant, Raisin or dried prune.
It comes in on the Scoville heat scale with 1,000-2,000 units of heat. It’s far from the hottest chile, but it’s not too mild to be interesting. It makes an enjoyable and easy to handle flavor addition to sauces, chilies, stews, and slow roasted meats. Rehydrate the Pasilla Negro Chile pod in warm water for 20 minutes and make into a paste or puree. After being soaked and blended until smooth, it can be added as a base to recipes or rubbed directly onto meate meat. Keep the seeds in for stronger spicy notes.
